observed cut onions, jalepenos, and zucchini in walk in cooler stored uncovered. COS-serran wrap placed over items at time of inspection.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
observed dishwasher not dispensing sanitizing agent. ca-ecolab called for repair/wash dishes at warewash sink in the meantime.

observed items in walk in cooler date marked incorrectly or not date marked at all. CA-place dates on all prepped food items and use/dispose of within 7 days.
