observed cut onions, jalepenos, and zucchini in walk in cooler stored uncovered. COS-serran wrap placed over items at time of inspection.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
observed dishwasher not dispensing sanitizing agent. CA-ecolab called at time of inspection. in the meantime, facility should utilize manual washing for dishes.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
observed improper or no date marking on several items in walk in cooler. ca-place date of prep on all prepped food items stored and use/dispose of within 7 day period.
