Observed the top of the prep top unit not holding temperatures at 41F or below. Mostly all TCS food items tempted were at temperatures above 41F. PIC discarded all food items and ice was placed underneath the fresh items until the unit is serviced (COS).

Observed the egg beater on the hot line in need of cleaning due to a thick debris. The beater should be cleaned regularly. The cook started the cleaning process (COS).

Observed the dishwasher at 10 PPM chlorine. Instructed the PIC to call ECOLAB to service the machine and use the 3-compartment sink to properly wash, rinse, and sanitize until the dishwasher is serviced.

Observed several utensils air drying in the cracks behind the 3-compartment sinks. Dishes should properly dry on the drain board or a dish rack.

Observed the floors in need of cleaning in the walk in cooler and underneath the shelves in the dry storage area. Also, observed the wall in need of cleaning behind the chemicals by the 3-compartment sink and the dishwasher.
