Observed the sanitizer bucket at a level too toxic. The quaternary ammonium test strip turned blue. The concentration should be at 200 PPM.

Observed that the pizza sauce was not marked or identified to indicate the time when the can was opened and sauce removed from the can. Also no documentation and/or letter is provided that states the allowance of the variance with written procedures of the variance is not available. PIC did not know how to obtain the documentation.
