6-1A - proper cold holding temperatures

Observed time control for safety / potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Observed walk in cooler holding TCS foods at 53F and reach in cooler holding TCS foods at 59F. COS: Repair company contacted and arrived to repair units. All TCS foods in reach in cooler were iced and inspector advised PIC to ice TCS foods in walk in cooler.

Cooked Time/Temperature Control for Safety Food in walk in cooler not cooling under 41f or below conditions to ensure the foods will be cooling at a rate to reach from 135F to 41F within 6 hours. COS: PLACED ON ICE AND IN FREEZER.

Observed nonfood contact surfaces of prep table where clean dishes are stored with food debris. CA: clean.
