Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed reach in cooler with no food maintaining temperature above 41°F. CA: Equipment shall be maintained in a state of good repair. COS: No correction on site can be noted. PIC must have reach in cooler serviced/repaired. This will be rechecked by health dept.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no measuring device for high temperature dish machine to determine max dish surface temperature. CA: Hot water sanitizing dish machines must have temperature indicator readily accessible for measuring the surface temperature. COS: No correction on site can be noted. PIC must obtain device to measure dish surface temperature (waterproof thermometer/temperature indicator strips). This will be rechecked by health dept.
