Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)

9 ptsCorrected: NoRepeat: No

Observed potentially hazardous TCS food (yogurt tubes - 46) cold-holding at a temperature greater than 41 F in main kitchen. Corrective Action: Discussed proper cold-holding temperature with PIC. Because the yogurt was in the cooler for less than two hours, the yogurt was brought to the walk-in cooler where it was rapidly cooled back down to 41 F. Ambient thermometer in the unit was reading 44 F; therefore, PIC will submit request to have the cooler serviced.
