Observed in prep top cooler: raw shrimp behind cut peppers, raw chorizo behind raw steak; reach in cooler: raw shelled eggs beside chile relleno, raw steak beside spinach, raw steak beside salsa; walk-in cooler: raw shrimp beside lettuce. PIC moved items to appropriate locations.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed dish machine closest to handwash sink at less than 50 ppm. Observed sanitizer bucket at less than 200 ppm. PIC will use only the approved dish machine until fixed; PIC re-made sanitizer bucket.
