OBSERVED CHICKEN IN THE PREP TOP COOLER ABOVE THE 41F TEMPERATURE THRESHOLD (47F, 47F). CA: COLD HOLDING TEMPERATURE CONTROL MUST BE AT 41F OR BELOW. COS: PIC DISCARDED CHICKEN AND RESTOCKED PREP TOP CONTAINER WITH CHICKEN FROM THE WALK IN COOLER AT A TEMPERATURE OF 37 DEGREES F.

OSBERVED NO EMPLOYEE HEALTH POLICY OR REPORTING AGREEMENT FOR ONSITE EMPLOYEES ASIDE FROM THE CFSM. CA: PIC WILL PRINT OUT AND SHARE EMPLOYEE HEALTH POLICY (RED BOOK) WITH EMPLOYEES AND HAVE THEM ACKNOWLEDGE THE POLICY WITH A SIGNATURE. CB: PIC WILL HAVE EMPLOYEES UPDATED POLICY BY 6/9/2026
