OBSERVED SEVERAL RTE TCS FOOD ITEMS IN REACH-IN COOLERS AND WALK-IN COOLER BEING STORED OVER 24 HOURS WITHOUT ANY DATE MARKING (HAM, TURKEY, LETTUCE, ALFREDO SAUCE, CHICKEN). CA: RTE TCS FOODS STORED FOR OVER 24 HOURS WILL BE DATE MARKED FOR A MAXIMUM OF 7 DAYS. COS: PIC DISCARDED FOOD ITEMS.
