6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed the meatball marinara to be hot holding at a temperature below 135F. RCA: Advised PIC to ensure that the meatballs are reheated properly before being placed in the hot holding equipment, and ensure that the hot held foods maintain a temperature above 135F throughout service.
