Regulation: 511-6-1.05(10)(g)2 - kitchen and tableware, properly handled to protect food-/lip-contact surfaces (c)
Observed multiple stacks of varying dishware to be stored with the food contact portion exposed and not protected from overhead contamination.
RCA: PIC stated that they will begin to use a dummy plate placed on top of the stacks to prevent overhead contamination.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed a bag of employee items to be placed on top of a prep top cooler.
CA: PIC had the employee move the items to an appropriate area.
