6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed items cold-holding above 41F above containers in top of prep-top unit (see temperature log). COS: PIC stated items were placed in unit less than 3 hours prior. PIC placed items in walk-in cooler to rapidly cool and will place in bottom of prep-top cooler when at proper temperature.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed cooking oil and seasonings stored in a container directly on floor underneath grill. RCA: Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee on cook line without a hair restraint. COS: Employee put on a hat before returning to work on line.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoop stored inside bin of flour with handle making contact with flour. COS: PIC ensured handle of scoop stored above flour.
