Observed raw steak and pork stored above cooked slices of beef in walk-in cooler. COS: PIC had employee rearrange items to ensure raw items stored above cooked beef.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed pulled chicken stored in container with old date-label for BBQ date for 1/12/26. Observed marinated pork chops with date label showing prep date of 1/12/26. PIC stated item had been pulled from freezer one day previous, but item was not relabeled. COS: PIC had employees correct date-labels.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed facility did not have proper testing method for T-10 sanitizer dispensed at three-compartment sink.
RCA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
