16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed handwashing sink in bar area to be improperly aligned with air gap allowing water to leak on the floor.
RCA: PIC shall have hand sink plumbing repaired as to prevent any waste water spilling on the floor. All plumbing shall remain in good repair.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed in-use knife to be stored in crevice between prep-top and prep-top hood.
COS: PIC instructed staff to store all in-use utensils in an area that is cleanable and free of debris. CA: All in-use utensils shall be stored on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed clean dish area to have plates inverted to where food-contact surface is exposed to contamination.
RCA: PIC shall invert plates as to prevent any overhead contamination. All clean equipment and utensils shall be stored where they are not exposed to splash, dust, or other contamination.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed reach-in cooler in bar area to have build-up of debris at bottom of equipment.
RCA: PIC shall have staff clean and sanitize the reach-in coolers in front bar area. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed build-up of food debris at the back of prep-top in fryer area.
RCA: PIC shall have area cleaned and sanitized. All non-food contact areas shall be clean to the sight and touch.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed multiple employee drinks in prep-area.
RCA: PIC shall designate a location for employee drinks. suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur.
