6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed noodles in reach-in cooler at 46F & 48F. Observed half and half in reach-in cooler at 43F & 45F. Observed pork in walk-in cooler at 55F, pork had been prepared days before.
COS CA: PIC discarded foods. For safety cold-holding of TCS foods shall be kept at 41F or below.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed slime on baffle inside ice maker.
RCA: PIC will increase the cleaning frequency of ice maker machine. Burn ice, clean and sanitize interior before refilling ice machine.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed facility had chlorine sanitizer testing strips available but facility was using Steramine sanitizing tablets requiring QAC testing strips.
RCA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed grease and dust build-up on food storage rack and liner.
RCA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
