Observed raw chicken stored next to crab dip and raw chicken stored next to pork chops inside reach-in cooler. COS: PIC ensured items were separated out by cook temperatures and all raw items were separated from ready-to-eat items in cooler.

Observed frozen chicken filets and crab legs stored uncovered in reach-in freezer. Observed containers of shredded cheese stored uncovered in bottom of prep-top cooler. RCA: All foods shall be stored covered to protect from outside contamination.

Observed build-up of food debris on outside doors of coolers, bottom of prep-top and reach-in coolers, and racks inside walk-in cooler.
