4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed build-up inside of ice maker machine. Observed cleaned dishware & utensils with food debris and or/build-up.
CA: MOD removed dishware and utensils for re-washing. Equipment, food-contact surfaces and utensils shall be clean to sight and touch.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed that mechanical dishwasher utilized hot water sanitization and verified to sanitize dishware at correct temperatures using DPH equipment but facility did not have their own methods to verify temperatures.
RCA: In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed build-up of carbon on backside facing cooking area on flattop grill and fryers. Observed dust and debris built up on fan used in kitchen area. Observed build-up on gaskets and interior sides of reach-in coolers. Observed standing water and food debris on rolling cart in kitchen.
RCA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
