Observed shredded cheese, cream cheese and butter cold-holding above 41F in walk-in cooler (see temperature log). COS: PIC discarded of all TCS items held in prep-top unit. Will have unit serviced before holding TCS items. PIC stated shredded cheese, cream cheese, and butter were placed in cold well less than 2 hours prior. PIC instructed to place all items in ice bath to rapidly cool. PIC stated walk-in cooler was opened and closed multiple times in the past hour and shredded cheese was pulled for use. Ambient temperature reading of 41F was obtained for unit. TCS items that were not at 41F or below in walk-in cooler were placed on an ice bath to rapidly cool. PIC will have unit serviced if ambient temperature reading of walk-in cooler rises again within next hour.
