4-1A - food separated and protected
Regulation: 511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - packaged & unpackaged food separation, packaging, and segregation (p, c)
Observed raw beef stored next to RTE deli ham, salami, and smoked turkey. Observed raw beef mixture adjacent to RTE onions and peppers.
COS: PIC re-arranged walk-in to avoid any cross-contamination from raw food-items. CA: All raw meats shall be separated from RTE foods and placed in respective of cooking temperatures.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed build-up on gasket and dispensing nozzle of soda machine.
RCA: PIC shall remove all nozzles and gaskets on soda machine and sanitize. PIC shall increase cleaning frequency of soda machine.
CA: All food-contact surfaces should be clean to sight and touch or cleaned at the frequency per manufacturer's instructions.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed drink cups being stacked while wet.
RCA: PIC shall re-wash, rinse, sanitize cups and allow to air-dry completely before use. Utensils shall be air-dried or used after adequate draining before contact with food; and may not be cloth dried.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed build-up of food debris in back of prep-top reach-in cooler closest to oven.
RCA: PIC shall clean and sanitize non-food contact surfaces. All equipment shall be clean to the sight and touch.
