4-1B - proper disposition of returned, previously served, reconditioned, and unsafe food
Regulation: 511-6-1.04(8)(a) - discarding or reconditioning unsafe, adulterated food, or contaminated food(p)
Observed multiple food items taken from the breakfast buffet line (sausage patties, sausage links, Kielbasa, hashbrown casserole, and corned beef hash) and put into the walk-in cooler to be reused for another food service.
COS CA: PIC discarded all food and was reminded once food is put out on a buffet line it cannot be returned to the kitchen to cool down and be used for reheating. RCA: Food that is contaminated by food employees, consumers, or other persons through contact with their hands, bodily discharges, such as nasal or oral discharges, or other means shall be discarded.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed mildew-like substance inside both ice machines. Observed food debris present on "clean" dishware and utensils.
RCA: Equipment, food-contact surfaces, and utensils shall be clean to sight and touch.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed mold-like substance on racks in walk-in cooler. Observed mold-like substance on dry storage racks. Observed mildew-like substance on soda machine levers
RCA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed build-up and debris on walls, ceilings and floors in main kitchen, dry storage area and walk in cooler.
RCA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(h) - dressing areas and lockers, designated and provided (c)
Observed multiple employee items (purses, glasses, coats) stored above and next to facility food items.
COS CA: PIC moved items. RCA: Lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions.
