Observed multiple TCS food items in reach in cooler to be above 41 degrees. Ground beef 52F, Pepperoni 47, bacon 49, Tomatoes 48. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below.
RCA/RA: I told the pick that he needed to toss out the food items that were above 41 degrees being that they were out for more than 6 hours. PIC throw out and replaced the food items.

During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: In food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon.
