Observed cheese at 50 F and tomatoes at 63F. When time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C)
RCA/CA: PIC discarded the cheese and tomatoes and replaced both items. As well as put them on an ice bath so that it would stay at the recommended temperature of 41 F or below.
