CA: Items (grilled mushrooms, tasso gravy, bolognese, pulled pork) were discarded and new product was placed in the unit. RCA: Discussed using ice and water bath inside the unti to keep items in temperature during service. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below.

Observed dishwasher in the main kitchen being used with a low chemical container. Upon testing the sanitizer was not registering on the test strips.

CA: Head chef replaced the chemicals and the PIC primed the dishwasher line so that it is now pulling sanitzer at the proper levels.
