Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Food-contact surfaces and utensils not sanitized properly after cleaning due to facility not having any sanitizer.
CA: PIC went to retrieve sanitizer from base of operations.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(3)(g) - food tmd, provided and accessible; appropriate tmd for measuring thin foods (pf)
There was not a suitable thermometer provided and/or readily accessible to measure the internal temperatures of food product.
CA: PIC went to base of operations to retrieve thermometer.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed leaking and shaking water heater.
RCA: A plumbing system shall be repaired according to law; and maintained in good repair.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Food truck did not have any testing methods for verifying sanitization concentrations.
CA: PIC went to retrieve test strips from base of operations.
