Observed pimento cheese (53F) and raw shell eggs (51F) holding in a what looks to be a residential unit above 41F. Observed chicken salad (45) and potato salad (45F) holding the the front deli cooler above 41F. Found that the unit is capable of holding below 41F; food is still within safety zone.
CA: PIC moved pimento cheese and raw shell eggs to a new cooler to lower temperatures. PIC found that knob on the unit had been moved and lowered the temperature. RCA: PIC shall ensure all TCS foods are held at 41F or below. PIC shall ensure the sliding door to the front deli cooler is closed all the way to keep food at appropriate temperatures.
