4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed no chemicals stored on the mobile unit for warewashing.
RCA: PIC shall ensure a chemical sanitizer is available on the unit at all times for in site warewashing when needed.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no test strips available on the unit for testing sanitizer when needed.
RCA: PIC advised that sanitizer test strips shall be available on the unit at all times. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
17D - adequate ventilation and lighting; designated areas used
