Observed small portions of coleslaw inside of full pan of pickles in prep cooler. Observed purple coleslaw portions and a small piece of plastic in pan full of diced tomatoes in prep cooler. COS: PIC placed a fresh pan of pickles and tomatoes in top prep cooler and placed lids on them.

Observed grease to be dripping along the side of the ventilation hood and drip pan to be overflowing. COS/CA: PIC discarded grease in drip pan. RCA: Facility shall increase the disposable of grease in drip pan and increase cleaning frequency of ventilation hood. Rule: Exhaust ventilation hood systems in food preparation and warewashing areas, including components such as hoods, fans, guards, and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.
