Observed employee starbucks drink stored right above prep top table in the lower level kitchen area.
CA: PIC discarded item immediately. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, and equipment.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed build up on ice baffle on the lower level kitchen area.
RCA: Food-contact surfaces and utensils shall be clean to sight and touch.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(2)(cc) - warewashing, automatic dispensing of detergents and sanitizers (pf)
Observed facility to have sanitizer/chemical for dishwasher but sanitizer/chemical is not pulling correctly to properly sanitize dishes.
RCA: PIC stated that he would call Ecolab. A warewashing machine that is installed after September 12, 2007 shall be designed and equipped to: automatically dispense detergents and sanitizers
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee's cell-phone stored on top of clean towels in kitchen on the lower level.
CA: Employee placed phone in a designated area. Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.
