6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple containers of cream cheese, a container of cooked beef, and a container of pastrami without date marking or labels indicating the preparation date.
Observed opened containers of milk and half-and-half at the barista station without an opening date to indicate when the containers were opened.
Corrective Action / Correction on Site (CA/COS): Person in Charge (PIC) placed proper date markings and labels on all food items listed above.
(RCA): Refrigerated, ready-to-eat, time/temperature control for safety (TCS) foods prepared and held in a food establishment for more than 24 hours must be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded. These foods may be held at 41°F (5°C) or below for a maximum of 7 days, with the day of preparation counted as Day 1.
Additionally, refrigerated, ready-to-eat TCS foods prepared and packaged by a food processing plant must be clearly marked at the time the original container is opened in a food service establishment (if held more than 24 hours). The marking must indicate the date or day by which the food shall be consumed or discarded. These items may be held for a maximum of 7 days at 41°F (5°C) or below, with the day the original container is opened counted as Day 1. The marked date may not exceed the manufacturer’s use-by date if that date is based on food safety.
