Observed several food items stored uncovered beside hand wash station (flour egg mixture) and prep-top coolers (salt, curry, minced garlic) in kitchen. RCA: Ensure food is stored covered when not being actively used.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed chlorine dish machine to not be pulling sanitizer, tested at 0 ppm. RCA: Ensure chlorine dish machine testing at 50-100 ppm. PIC instructed to have staff use three-compartment sink until machine is serviced and verified to be pulling proper concentration of sanitizer.
