Regulation: 511-6-1.04(1) - safe, unadulterated and honestly presented (p)
Observed a box of carrots with mold and heavy presence fruit flies stored on bottom shelf of prep table. Observed a box of lemons and limes stored on prep top table with mold and in bad condition.
CA: PIC discarded items onsite. Food shall be safe, unadulterated, and honestly presented.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed no paper towels readily available at hand-washing sink at the bar area.
CA: PIC placed paper towels at hand sink. Each handwashing sink or group of adjacent handwashing sinks shall be provided with individual, disposable towels.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed salt and pepper on prep line uncovered and not in active use. Observed tiramisu and lemon tiramisu stored in the walk-in cooler without a covering. Observed cornbread stored on storage rack without a covering and not in active use.
CA: PIC placed a covering over items. Food that is stored should be covered to protect from overhead contamination.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed several boxes of eggs and milk stored directly on the ground in walk-in cooler. Observed multiple boxes of food stored directly on the ground in walk-in freezer.
CA: PIC stored items on racks. Food shall be protected from contamination by storing the food:
(i) In a clean, dry location;
(ii) Where it is not exposed to splash, dust, or other contamination; and
(iii) At least 6 inches (15 cm) above the floor.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed heavy presence of fruit flies at bar area and in the main kitchen.
RCA: PIC stated they are actively working with EcoLab. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by:

Routinely inspecting incoming shipments of food and supplies;

Routinely inspecting the premises for evidence of pests;
-
Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule; Pf and
-
Eliminating harborage conditions.
