Observed employee protein shake, creamer (open), milk(open) and cream cheese (open) to be stored within reach in cooler reserved for facility food product. COS/CA: PIC moved personal items. RCA: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.

Observed a full container of expired whole milk (4/28/24) stored within reach in cooler near stove in main kitchen. COS/CA: PIC discarded milk RCA: Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date.

Observed reach in cooler by ice machine to be have an internal thermometer. COS/CA: PIC placed thermometer within cooler. RCA:In a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit.

Observed a full box of cabbage to be molded in the reach in cooler near the ice machine in the main kitchen. COS/CA: PIC discarded container of cabbage. RCA/ Food Service Rule: Food shall be safe, unadulterated, and honestly presented.

RCA: Except when packaging food using a reduced oxygen packaging method, and except as specified in paragraphs 4 and 5 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days.
