Observed multiple TCS foods (pork cuts, bratwursts, and chicken) holding at temperatures above 41°F in the reach-in unit. (See Temperature Log).
CA/COS: PIC stated the foods were prepared at 9:30 AM prior to opening at 11:00 AM. Upon further inspection, the interior of the mobile unit had reached an ambient temperature of 100°F. The reach-in unit was holding an ambient temperature between 38°F–40°F. PIC voluntarily discarded the affected meats and prepared a new batch, which was properly stored in the reach-in unit. PIC was instructed to ensure all TCS foods are at or below 41°F prior to being stored and to use ice baths if needed to maintain proper holding temperatures during preparation inside the mobile unit.
