Observed improper storage of raw chicken placed beside raw pork chops located in reach in unit.
CA/COS: PIC removed raw pork and raw beef from beside raw chicken placed on shelves above raw chicken.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed raw beef patty, pork sausage patties, raw bacon slices cold holding above 41F.
CA: Items were moved to the walk-in cooler to be brought down in temperature. PIC shall monitor internal temperature of the reach-in cooler. RCA: Time/temperature control for safety food shall be maintained at 41°F (5°C) or below.
4-2A - food stored covered

Observed TCS & RTE foods (raw chicken, raw pork chops and waffle batter) stored inside of the reach in unit uncovered.
CA/COS: PIC placed lids over containers of said foods.
4-2B - food-contact surfaces: cleaned & sanitized

Observed pink-like build up on the inside and walls of ice machine.
RCA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed build-up of old food debris around waffle station and inside reach-in coolers.
RCA: Non food contact surfaces shall be clean and free of build up or debris.
