Observed buildup of debris and food around the interior seals of doors and drawers of reach in coolers, around the ice scoop holder at the drive-thru window.

RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed mop stored on floor next to mop sink even though proper mop drying hooks are located near the mop sink. PIC moved the mop to proper drying location.

RCA: Drying Mops. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.

Rule: After cleaning and sanitizing, equipment and utensils shall be air-dried before contact with food. Observation: Observed wet stacking of dishes on drying rack. Notified PIC. PIC removed stacked utensils and set aside to allow for adequate drying before proper storage.

Rule: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observation: Observed loose trash and build of residue below tea and drink cabinet and around drink dispensing machines, causing a build up of a sticky dark residue on the door handles and bottom of cabinets. Observed build up of debris around coffee makers. CA: Advised PIC that area needs to be cleaned on a regular basis, and trash removed. Recommended increasing cleaning frequency schedule to maintain levels of cleanliness.
