CA: PIC discarded all foods. For safety, cold held foods shall be kept at 41F or below.

Observed build-up on walls, ceilings, and floors. Observed excessive broken and missing floor tiles.
RCA: All physical facilities shall be maintained in good repair. Physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Observed multiply items in the prep top cooler, lettuce (46 F), ham (46 F), turkey (47 F), tomatoes(48 F). Employee had items stacked high in the prep-top cooler where is was unable to maintain temperature at 41 F or below.
CA: Items in prep top cooler were placed in at 10:45, PIC used time as a public health control and will discard remaining product at 2:45.
Observed green beans in walk-in cooler at 51 degrees F.
CA: PIC discarded affected item. Educated PIC on maintaining temperatures at 41 degrees F and below.

Observed dishes (tea pot and long-handled spoon) stored in the hand sink (not accessible for use). CA: PIC removed dishes from sink for wash, rinse, and sanitize. Educated PIC on proper use of handwashing sink. Must be accessible for use at all times.. Observed food debris in hand-sink next to grill. Educated PIC on utilizing a hand-sink for hand-washing only. Hand-sinks cannot be used as a dump sink

Observed food stored uncovered in reach-in cooler and both walk-in coolers. (lettuce, cucumbers, chicken, diced onions, bbq sauce). PIC covered affected items. Educated PIC on protecting food from overhead contamination with lid or suitable cover.

-Observed food stored on floor next to hot-holding line (bbq sauce) and also in walk-in cooler (also bbq sauce). -Observed dry-goods stored on floor at door for curb-side (utensils and condiments). Employees moved items to shelving units. Educated PIC on maintaining food product and single service items stored 6" off floor.

-Observed employees wearing jewelry (bracelets and watch) while actively prepping food. PIC had employees remove jewelry. Educated PIC on the wearing of jewelry of employees. Employees can only wear a plain wedding band.
