Observed excessive flour build up on flour storage shelf in the chicken preparation area. Observed food build up on the side of the reach-in cooler next to the breading station. Observed build-up in the handles of the reach-in coolers within the chicken preparation area. Observed food debris and build-up on the bottom shelves of the reach-in cooler in the chicken preparation area.
RCA: 511-6-1.05(7)(d) - Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Observed multiple items (metal pans, trays etc.) wet stacked on dry dish rack. Observed employee placing wet items (metal pans, trays etc.) placed on top of dried dishes.
CA/COS: Directed PIC to inform employee of wet nesting and remove all wet items to an air-dried area.

Observed residue of removeable stickers left on metal pans in dishwashing area. Observed old label on clean pan in dish area.
RCA: The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
