4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed mechanical dishwasher not pulling adequate concentrations of chlorine sanitizer. Observed no sanitizer connected to 3-compartment sink, facility did have sanitizer available. Observed old labels and glue residue stuck to "clean" food containers.
COS: MOD was able to replace chlorine to dishmachine.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed to go boxes, cups, and lids stored directly on floor in storage area.
COS CA: Employee moved items off floor. Single-service and single-use articles shall be stored:(i) In a clean, dry location;(ii) Where they are not exposed to splash, dust, or other contamination; and(iii) At least 6 inches (15 centimeters) above the floor.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Facility did not have chlorine testing strips for dishwasher.
RCA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
