4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
-Observed build-up of debris in ice scoop holders (holders did not allow for drainage). PIC removed ice scoop holsters for wash, rinse and sanitizing. PIC to ensure holes drilled in bottom of ice-holders. Educated PIC on ensuring food contact surfaces cleaned and sanitized.

Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed chlorine test strips in sani-buckets with a concentration greater than 200ppm. PIC had employee dilute concentration down to a level of approximately 50ppm. Educated PIC on ensuring employees are utilizing test strips to ensure sanitizer is at acceptable levels.
