Observed raw ground beef next to raw chicken in reach-in cooler. Observed shrimp and fish next to shelled eggs.
RCA: Except when combined as ingredients, separating types of raw animal foods from each other such as beef, fish, lamb, pork, and poultry during storage, preparation, holding, and display by:
(I) Using separate equipment for each type, or
(II) Arranging each type of food in equipment so that cross contamination of one type with another is prevented.

Observed raw ground beef next to raw chicken in roll-top cooler. Observed raw shrimp next to cooked noodles in roll-top cooler. Observed raw bacon over RTE items in reach-in cooler. Observed raw whole cuts of beef next to raw ground meat next to RTE items. CA: PIC moved items to provide spacing in between food items. A physical barrier (such as a lid or plexi wall) should be utilized to create a barrier inbetween food items to maximize space. Reorganize coolers and label coolers to ensure proper separation is maintained.

Observed handle of tongs in contact with cole slaw stored in reach-in cooler. CA: PIC rearranged tongs so they would not come into contact with the food product. Recommend utilizing saran wrap so food is still covered but can allow handles to protrude out of wrapping. The slaw can also be stored in prep-top cooler for easier in-use storage and use.
