Observed multiple plates not in use for service not protected from overhead contamination, by either inverting or using cover plate. CA: PIC shall invert or use cover plate for all dishes. RCA: Clean equipment and utensils shall be stored Covered or inverted.

observed multiple employee clothes and items in kitchen near clean dishes and prep area not in a designated location. CA: PIC moved all items to designated location. RCA: Lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions.

Observed a roll-top cooler in the main kitchen with food items all within the 44F temperature range. The unit was capable of maintaining temperatures of 41F and below. CA: PIC discarded all TCS foods not within the appropriate temperature range. Unit shall not be used until repaired.

Observed reach-in cooler with dairy products with temperature ranges of 49-50F. PIC indicated that the cooler had not been opened for shift. CA: PIC discarded dairy products. Unit was able to be turned down. PIC shall monitor temperatures and not store TCS-products within until maintaining 41F or below.

Observed multiple food items throughout the facility not stored in the originial container and not containing a label (potatoes in walk-in, sauces in reach-in cooler, onions in reach-in, meats in walk-in cooler). RCA: 511-6-1.04(7)(c) - Food Labels (Pf, C) (c) Food Labels.
