Observed chlorine ware wash machine not pulling proper concentration of sanitizer. Dish machine was not operating yet at time of walk-through. Operator asked to turn on machine to assess. COS: PIC called for machine to be serviced and instructed employees to utilize three-compartment sink until it is repaired.
CA: A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions.
