CA: PIC discarded items within the reach-in cooler and turned down the unit. Reach-in cooler was verified to be capable of maintaining an ambient temperature of 36F. PIC indicated salsa was prepared fresh at 10:00am. PIC will utilize TPHC and discard any leftover product at 4:00pm. PIC indicated salsa will be used prior to dinner service. Recommend utilizing shorter containers within the ice bath to properly cold hold or an ice paddle for larger containers. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below.
