6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS items (lettuce, mayo, cheddar cheese, whipped feta cheese, and salad dressings: Italian, bleu, balsamic) holding above 41F in reach in cooler near salad prep area. CA: PIC discarded all food items holding above 41F. PIC stated they were going to call and get reach in cooler serviced and not hold TCS food items in it.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed multiple plastic Cambro lids to be broken or cracked. observed multiple plastic Cambro's to have cracks in them. CA: PIC discarded broken items RCA: Equipment shall be maintained in a state of repair and condition
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
observed heavy food debris build up within the gaskets of reach in cooler attached to pizza station and attached to salad station. CA: PIC Shall clean items RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed food debris build-up on walls by each pizza prep top station. observed food debris build-up on walls by back hand sink. Observed food debris build-up on the floor of walk-in cooler. CA: PIC shall deep clean physical facilities.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed electrical box on side of walk-in cooler next to fryers, to be open and wires exposed. CA: PIC shall enclose exposed electrical wires. RCA: All physical facilities shall be maintained in good repair.
