6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed liquid egg being held greater than 41 degrees at grill prep station. (Liquid Eggs - 61). CA: TCS foods must be held at 41 degrees or lower. COS: PIC discarded liquid eggs and replaced container with new ice bath.
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed TCS foods being held less than 135 degrees. (Fried chicken breast - 130, fired chicken wings- 110-130, fried chicken drumsticks - 120). CA: TCS foods must be held 135 degrees or higher. COS: PIC chose to reheat items to 165 or higher, then held at 135 degrees.
