Observed multiple TCS foods being stored above grill area not at 135 degrees or higher (cooked chicken 101, cooked brisket 103, cooked onions 103). CA: All TCS foods kept hot must be held at 135 degrees or higher. COS: PIC reheated all items to 165 degrees for hot holding. PIC will meet with Health Department next week to discuss writing a policy to use time for the temperature control.
