Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed mechanical ware washing machine having too low sanitizer concentration. Concentration reading 0ppm. CA: Mechanical ware washing machines must clean and sanitize food-contact surfaces at correct sanitizing levels. COS: PIC will not use mechanical ware washing machine until repairs are made and will use three-compartment sink for washing and sanitizing all dishes. PIC will contact Health Dept once repaired to have ware washing machine repaired.

Observed cutting board at prep top table worn with deep cut marks and worn from use making cutting board making it unable to be cleaned and sanitized properly. CA: Surfaces such as cutting boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced. COS: PIC will replace cutting board at prep top table.
