Observed potentially hazardous TCS foods cold held at greater than 41 degrees Fahrenheit. Observed shell eggs cold holding at greater than 41 F in cooler on main grill line. CA: Discussed cold holding procedures for eggs. Eggs had been placed in cooler in original carton which was too large to properly fit in cooler space. Discussed removing eggs from original carton and placing in metal pans to assist with proper cold holding. Reference temperatures were taken to ensure that the cooler was working properly. PIC discarded eggs.

Observed potentially hazardous TCS foods cold held at greater than 41 degrees Fahrenheit. Observed prepped salads across multiple reach in coolers cold holding above 41 F. CA: Discussed proper cooling methods with PIC. Salads had been prepared within the last hour and had been placed into reach in coolers to be sold without being properly cooled. PIC moved all salads back into walk in cooler to be properly cooled. PIC will educate staff on proper cooling methods for prepped food items and take temperatures to ensure food is properly cooled before being served.
