6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed stand up refrigerator operating at 55F at time of arrival. Internal temp of cheese was 50F and ham was 48F. Refrigeration must be capable of maintaining TCS foods below 41F at all times.
Repair/Adjust refrigerator so that TCS foods are maintained at 41F or below at all times. Purchase of an additional refrigerator for cooling may be necessary.

Observed egg burrito at 120F and chicken sandwich at 125F on hot hold display. Foods hot held must be held at 135F or above. Items made with ingredients cooled in house must be reheated to 165F before being hot held above 135F.
