6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed reach in cooler in kitchen with an ambient air temperature (AAT) of 71°F. Observed several TCS foods cold held above 41°F. TCS food must be cold held at 41°F or below. PIC states the AAT was 39°F this morning. COS by moving TCS items to reach in cooler near restrooms. Must ensure kitchen reach in cooler is fixed before cold holding TCS items within it again.
